What does John 10:7 mean?

Jesus is describing himself as the doorway through which sheep enter safety and care. In the pastoral setting of ancient Israel, a shepherd often stood in the opening of a pen at night to protect the flock, literally becoming the barrier between the sheep and danger. Jesus is saying that he is that protective entrance for us, the way to genuine security, belonging, and care from God. When we come through him, we're not wandering lost or exposed, but moving into the shelter and attention of someone who knows us and will guard us.
