What does Leviticus 8:27 mean?

When Aaron and his sons were being set apart as priests, Moses placed the portions of the sacrifice into their hands and then waved them before God. This symbolic gesture—the waving motion—was a way of presenting their offering to the Lord and acknowledging that everything they had, including their new role, came from God's hand. It's a picture of consecration, where people are formally given over to God's service while also receiving God's blessing in return. For us today, it speaks to the idea that when we offer ourselves fully to God, we're also receiving the privilege and calling that comes with serving Him.
